Ingredients of Menu:

For 8 servings

  • Using Fruits and Vegetables

1. Crushed 2 small garlic cloves

2. Fresh roughly chopped coriander 6 tbsp

3. Lime juice 2 tbsp

4. Deseeded and chopped 1 red chilli

5. Firm peeled and segmented 2 pink grapefruit

6. Small cored and shredded ½ white cabbage

7. Trimmed, quartered and thinly sliced 2 fennel bulbs

8. Thinly sliced 2 little Gem lettuces

9. Thinly sliced ½ lime

10. Fresh coriander leaves, small handful

11. Deseeded and cut into thin strips ½ red chilli

12. Onion, 1 small

13. Trimmed Brussels sprouts 900g or 2lb

14. Lemon juice, 2 ½ tsp

15. Zest and juice of 1 orange

16. Zest and juice of 1 lemon

17. Cored and grated, eating apple 1

  • Tins, packets and jars:

1. Mayonnaise 275 g or 10 oz

2. Apricot jam 2 tsp

  • Ingredients of Cooking:

1.       Black pepper which is freshly ground and salt

2.       Cloves, 4

3.       Fresh white breadcrumbs, 75-100g or 2 ½ to 3 ½ oz

4.       For the taste, freshly grated nutmeg

5.       For sprinkling, cayenne pepper

6.       Sunflower oil, 4 tsp

7.       Flaked almonds, 20g or ¾ oz

8.       Fresh white breadcrumbs, 5 ½ tbsp

9.       Soft white or brown breadcrumbs, 275g or 10 oz

10.   Dried and chopped apricots, 100g or 4 oz (to be about the same size as the raisins)

11.   Dried and chopped figs, 100g or 4 oz (to be about the same size as the raisins)

12.   Currants, 225g or 8 oz

13.   Seedless raisins, 225g or 8 oz

14.   Sultanas 225g or 8 oz

15.   Finely chopped, high quality candied peel, 75g or 3 oz

16.   Finely chopped almonds, 50g or 8 oz

17.   Salt ½ tsp

18.   Ground mixed spice, 1 tsp

19.   Ground cinnamon, 1 tsp

20.   Freshly grated nutmeg, ½ tsp

 

  • Drinks:

1.       Brandy, 4 tbsp

  • Dairy, chilled and eggs:

1.       Unsalted or lightly salted butter, 175g or 6 oz

2.       Full cream milk, 450ml or 15fl oz

3.       Double cream 2 tbsp or butter 40g or 1 ½ oz

4.       Butter, 20g or ¾ oz

5.       Double cream 400ml or 14fl oz

6.       Freshly grated parmesan cheese, 4 tbsp

7.       Shredded suet, 225g or 8 oz

8.       3 Lightly beaten, free range eggs

9.       Milk 150ml or 5fl oz

10.   For greasing the pudding bowl, butter

  • Meat, fish and poultry:

1.       Mixed cooked unpeeled prawns 900g or 2lb and shells should be removed

2.       4kg or 8lb 11oz weighing 1 free range turkey

3.       Bacon lardons 150g or 5 oz, or rindless back bacon while cutting them into short fat strips.

  • Some other things:

1.       Stout or similar dark beer 150ml or 5fl oz
